The same as those that are available without it. A degree in ichthyology is not going to make much difference to your general employment prospects unless you want to be an ichthyologist.
If you want to do a degree in order to get a job afterwards then you may want to study something else.
If you're a genius who loves fish then do your degree then get a job in investment banking, - though, your degree may work against you here.

You can work as an environmental consultant, helping real estate developers decide about their proposed environmental impacts near lakes/oceans, or deciding if a power plant is going to kill too many fish with heat in the water or filtering systems for cooling water. Or, you could work for various governmental agencies relating to fishery management. Or, you could work for a museum.
