I do a wicked stuffed green pepper. Ground beef, some onions, tomato sauce, rice, garlic, spices, all stuffed in a plump green or red pepper and baked with cheese until bubbly and tender..mmmmm its soo yummy!

IMHO My Lamb Curry - but it's so much work I rarely do it,
on the other hand I do my Sol Cal Style Beef Taco's every other week or so to rave reviews.
Both of these are dishes that are Finished /Assembled on the plate by the diner to his or her choice from a base dish and a lot of add-ons, So if your one of the snobs that think its not a Dish if the person even has to salt or pepper it I would say my Beef Strogonoff

Well, lately my specialty is a wild sockeye salmon grilled with raspberry chipolte and fresh veggies with extra virgin olive oil lightly salted and peppered. With a spinach salad and warm bacon dressing. Also, nice tortilla soup. I guess that's the dish I am best at.

I'm good with the breakfast cusine. Omelettes are my favorite to cook. That's my favorite though, not really my best recipe. I'd have to go with a rice and beans salad, it's fired up with hot banana pepper rings and little pieces of celery for crunch and colour. Very good if I do say so myself, and under the circumstances I guess I do! LOL, thanks for this question, I'm sure there must be better beans and rice salads out there.
