Fish poop doesn't sink automatically all the time just like human feces doesn't float all of the time. Fish poop is smaller, has less fiber in it and is in a larger body of water so it breaks down faster than human poop which is in less water. Once it gets into a larger stream, it too will break down and sink.

it must be to do with the diet of a fish, the food they eat is much smaller and therefore has less fibre. also observing the fact that that they do not breath air i would say that the cells that sometimes release through excretion would not have oxygen contained, therefore the faeces would sink. the disintegration of fish faeces would be faster because the water it is contained in would have much more bacteria, bacteria breaks down faeces. if you had a really dirty toilet and plumming system your faeces may disintegrate faster. if thats helped anybody i am pleased.
