My gf says I'm too mean and she wants to break up if I can't be nicer to her. Any way to be nicer over night?

Seriously, you should just be more patient and calm around her. You're dating. This is when you're supposed to act your best to impress her. All she can think is that if the relationship went any further, how mean would you act THEN? That, and would you be abusive to her? These questions are bound to run through her head, and you need to show her that you are willing and capable of changing this bad temper of yours. Perhaps there would be an anger group or you could see a therapist if you're really stressed. If you're not interested, and I wouldn't be, search some stress - relief techniques on the Internet.

Give her compliments, be open minded, be understandable, don't say negative stuff to her unless it's for constructive criticism..etc
