For example when the email is sent a name is listed from whom it is being sent and reality the email is from another person. How does one change the email heading?

False identification is a crime. But if you need to change the spelling of your name, you can change this easily.

- In Yahoo email, just click on OPTIONS
- for Outlook, go to the TOOLS menu and pick ACCOUNTS. Check each e-mail address that you have programmed in.

Good luck

Its called email spoofing. It involves simply setting the display name or “from” field of outgoing messages to show a name or address other than the actual one from which the message is sent. Most POP e-mail clients allow you to change the text displayed in this field to whatever you want.

You will be able to tell if it really originated from the address it says its from by checking the mail's full headers.

Spammers use more sophisticated methods to fake the email headers so that it wont be obvious. They use mail relayers.

This was in Outlook Express Help.

To change the way your name appears to other people
On the Tools menu in Outlook Express, point to the name of your messenger service, and then click Options.
On the General tab under My Display Name, click your name, and then type the one you want.
Other people who have you in their lists will see your new name the next time they log on.

Note

If you want other people to see your name change immediately, you can change your status to Appear Offline and then change it back to Online.

Hope that helps.
Yahoo will be similar.
