You should not go to college assuming that your degree will land you a job. College is supposed to teach you to think. If you approach it as just a hurdle to pass before getting a job you will be missing the point. Only you can know if you're actually ready to tackle college learning. There will be people there who are "surface learners" who just learn enough to pass the tests. This is a waste of time IMO, especially if you're taking something like an Arts major.
If you do earn a degree then this tells a potential employer that you can write decently well and have basic numeracy. Many degrees will also indicate that you can think rationally. Engineering majors typically have some of the highest salaries coming out of school, though their salary earning potential levels off quicker if they do not move into management. If in the US, if you're not very, very bright I encourage you NOT to major in electrical engineering or computer science. These areas can be easily outsourced to countries with lower wage demands. Civil engineering and mechanical are good, general and you can move onto other degrees afterwards. Civil cannot be easily outsourced, and same with certain areas of mechanical. Environmental should be important in the coming years, however don't expect to get rich saving the pines. Business is another good major that prepares you directly for the job market. No matter what you choose, make sure you enjoy what you're doing otherwise you'll not learn very much. There is something to be said for learning a trade and just working if you're so inclined.
The US gov't keeps stats on job trends in its occupational outlook handbook

In general remember this: If you have good writing skills, can use numbers and can think then business can employ you. There actually are not that many people who can do all these things, relatively speaking.

Any Engineering or Technology. There will always be a need for that.
Lawyer. There will always be a need for that too.
Anything in the Medical field not only pays well but all jobs are constantly in demand and you can pick where you want to live.
If you search the job listings on Yahoo Jobs, Monster. com, and others you will see what is in high demand.
I went to school for communications (never finished) but have never had a problem finding a good paying job in the industry.

Robotics, aviation, and mechanics. We'll always have planes n helicopters flying in the sky. We'll always have cars n trucks to drive around. And robotics is on the verge of coming out of the closet. Either way, there will always be a need to design fly, drive, and repair these things.

There is a nursing shortage and the pay for nurses is pretty good. You can usually find a job anywhere you move to. And, there is chance for advancement by becoming a nurse practitioner or CRNA (I know I am forgetting a lot here... sorry).

Anything that would not be considered a "liberal arts" major. I've heard those described as walking into a gold mine and walking out empty handed.

Do what you love. You have to live with it for the rest of your life. Don't get into something that you think is the best or everyone is doing. Trust me.
