I want to save them to browse offline and keep if the online website changes.

In Internet Explorer, click File - Save AS.

Drawback is you have to save every individual page you want to look at again.

Simply go to those websites, click on Favorites, click on Add to Favorites, and then when it pops up the confirm box, choose the Make Avaliable Offline option. Now click OK and it should be avaliable offline.

to save a website you just add them to your favorites so that when you want to go there you can just easily click on them. to do that there is a tab at the top of your internet that should say favorites and when you are on your fave website just go under that tab and click save to favorites.
