Are there any common vegetable discards that are not good to add to a compost pile? Are potato peelings ok for example? What about fruit?

All vegetable and fruit refuse can go in, the only thing not recommended is clippings from roses, because of the fungus, and any other plants that might have a disease.

No there are no restrictions Im aware of. Egg shells take a long time to decompose but you can use them. The only thing to avoid is cooked food scraps, grease and the like but any vegetable matter however is accaptable.

Everything will decompose eventually. Turn your pile, and screen out the laerge pieces before you use it. Toss the un-decomposed things back in the pile.
