There may be an obstruction to the air flow through the evaporator (the part that cools the inside air). Once the evaporator starts to collect frost, the air flow is further impeded and it will freeze solid. To run the fan alone to thaw it out is correct. There is no reason to suppose an inadequate supply of Freon. Important: check the air filters to see that they are clean. A workaround is to set the thermostat a bit higher, so that the unit will either not get so cold or have time to thaw if it does.

any restriction of air flow will cause the compresser especially dirty filters to start to freeze up. But you could also be low on freon. I pretty easy way to check if you are low on freon is feel the discharge air coming out of the condensing unit. It should be really warm. If it is cold then it will be low on freon. This is not a 100% test but it will give you a sign of what might be going on.

Clean the evaporator fins (the coils inside the house). If that doesn't fix the problem, it may be low on freon. BTW, If you clean the coils, mix a little bit of Dawn dish soap with water in a spray bottle. In my experience, that works great.

Either your filter is clogged enough to not allow enough airflow over the coils to cause a problem, or your unit has leaked freon and needs to be recharged. Check your filter, and if clean one doesn't fix the problem, call a serviceman.
