Here's my top ones:
1) Any sales job, especially the ones that require a lot of travelling, trade shows, etc. It's only a matter of time until you hit it off with somebody on the convention floor, the hotel bar, whatever. Further, because you don't keep regular office hours, nobody can really keep track of your comings and goings.
2) One that is predominantly female, such as marketing and advertising. For some reason, women are more competitive over men when the ratios get out of whack, regardless of if they are married or not.
3) Anything that requires one-on-one counselling or a high degree of trust. Psychiatry, the ministry, and law always seem to be that way.
4) Any profession where men have a great deal of power, such as politics or law. Women are naturally drawn to power. It is an aphrodaisiac.

Could be way off base. I would think jobs that require lenghty or distant trips from home. Reminds me of the commercial what happens in Vegas stays in Vegas.
Jobs that deal with the selling of alcohol. Bar tending, watressing, bouncers. etc. Being around people that aren't quite themselves, inhibitions are down.
Of course anything that has to do with nudity. Strip clubs, porn shops, etc
The Internet is becoming a growing infidelity issue. People hooking up who normally wouldn't meet in given situations

The highest risk of infedility in a career depends on the kind of person you are. It doesn't matter where you work its the person you are, your morals, the type of relationship you have. I believe if you have everything at home you dont need to be looking somewhere else for it.

I don't think infidelity depends on a type of career but on the type of person and on the type of relationship
