The entire Xanth series by Piers Anthony. Well.. at least the first couple ones.. I've heard the later ones aren't as good. They are a good read, but also pretty humorous.
"The series is noted for its punny and somewhat humorous style."
I enjoyed the first 5, but then moved on to other books. So those first five.. I would HIGHLY reccomend.
A list of the books:
1. A Spell for Chameleon
2. The Source of Magic
3. Castle Roogna
4. Centaur Aisle
5. Ogre, Ogre

I absolutely loved the Eyre Affair!
I would recommend anything by Nick Hornby. I personally liked About A Boy the best. Jonathan Safran Foer is hilarious. I liked Extremely Loud and Incredibly Close a little better than Everything is Illuminated only because of the pictures =)
Curious Incident of a Dog at Nighttime was hilarious
Anything by Christopher Moore is going to make you fall over and cry/laugh (I loved A Dirty Job)
Thank you For Smoking by Christopher Buckley
A Confederacy of Dunces is so wierd and hilarious, you won't look at a hot dog the same way again
I loved The Amazing Adventures of Cavalier and Klay by Michael Chabon
Catch 22 is awesome
Anything by Dave Barry is hilarious. He's mostly comedy/humour but his fiction novel Big Trouble made me fall off my bed =P
And if you're looking for something that's funny because it may/maynot be true, Why do Men Have Nipples and Why do Men FAll Asleep After Sex
haha, have a great time reading and laughing

The Hitchikers Guide to the Galaxy series (if you didn't like the movie, dont worry, because the books are much better) by Douglas Adams, and I just read these books called "The Pirates! in an Adventure with Scientists" and "The Pirates! in an Adventure with Ahab" both by Gideon DeFoe. Check them out, They're good'uns.

A really good funny book with a really satisfying ending is Lucky Jim by Kingsley Amis.
Try Billy Liar by Keith Waterhouse
Without Feathers by Woody Allen - a collection of short and crazy pieces.

Dave Gorman's Googlewhack adventure. Intelligent yet not sensible. It's about Dave Gorman (a comedian) travelling around the world meeting "Googlewhacks" - the result of putting 2 words into Google and only have one result. He meets the people that runs the websites.

Then hie ye to Terry Pratchett where you will find wit, silly names and a universe that isn't much like ours - or is it?
I'd start with "Guards Guards" and then read the rest of the Guards series first, but really you can start anywhere in the first half dozen titles he wrote and be sure of a belter.

Riotous Assembly or Indecent Exposure by Tom Sharpe, you will never forget them, you will cry laughing and you will not be able to put them down, then try Wilt, Throwback, Porterhouse Blue etc. by the same author.
Good reading

Try King Fortis the Brave - it's more of a fantasy adventure book, but the Ward is one of the funniest characters I've come across.

It's a while since I read it but "The Wimbledon Poisoner" by Nigel Williams was a good laugh. It's about a hapless middle-aged suburbanite who decides to murder his wife but keeps making a mess of it.
