Because, like all fetishistic behaviour, it's the unexpected - someone doing something they wouldn't normally do, like a prim woman you might know dressing all slutty, or someone you know whom you might catch smoking - and you'd no idea they smoked.
If a lover is normally a quiet, reserved, polite type, to have them swear like a sailor during sex is completely unexpected - and for some, this altered behaviour is what turns them on.
Also, for the reserved type of lover, talking dirty is a release, an emotional catharsis. They know bad language is offensive in polite conversation: but during sex, they see that bad language does the opposite to their partner, turning them on instead of forcing them away. This unleashes their own arousal, which encourages more of the same and so on.

I don't know I'm female . I'd rather be talked to softly and praised but hey ho it is give and take in relationships. From limited experience men love dirty talk - but it makes women feel cheap and worthless! My husband said that it turns him on because it makes him more focused on sex if I use dirty words!

I have no idea, I think it's because it's such a taboo to talk like that in every day life.
I once gave a BJ to a bloke who called me a 'dirty b*tch in the middle of it - It scared the crap outta me (I've never been spokento so harsely during sex before) and stopped me wanting to do it again!(with him anyway!) So if you are gonna try it make sure everyone involved is aware.
