be honest and tell them you are flattered that they find you attractive but you are not interested and offer to still be friends if possible

Be flattered. Many people, gay or straight, aren't good looking enough to be attractive to certain people. The only tragedy would be if you allowed this very honest statement to alter your friendship with the other person. Let him/her know how you feel and that you are flattered but not interested in the same sex. 99% of the time that should be enough.

that has happend with me twice. and before that i thought i would act cool and tell them calmly.. but when it happened i got very embarrased and flustered.. and basically ran in the opposite direction.. and avoided any conversation in future.. but i really couldnt help it the female was getting after me! next time this girl didnt really ask me out but tried flirting way too much.. i remained calm and avoided her.

tbh, i wouldn't let it get to that. i'd say in the nicest possible way that i'm not like that and that i never could be, but ask if we could try and just move on from that. but i would find it hard not to be quite freaked out.
