At the moment of death, cells die and the human body immediately begins to decompose. And actually, oxygen and air are what makes you body decompose, contrary to some of these answers. Your body is full of organisms and bacteria, and when you die, you immediately begin to decompose, because those organisms and bacteria multiply and run rampid. The only way to slow the process of decompostion is by embalming the deceased. Even embalming doesn't prevent decompostion, it just retards or slows it for an indefinite period of time.
