I just recently finished building my newest computer, and it wasn't till i was downloading the drivers that I realized that my optical drive (dvddl, lightscribe, all that good stuff) can run on either IDE or SATA.... I installed it using the IDE, but it's not too much trouble to switch it to SATA. My question is, how big of a difference will it make on an optical drive by switching. The drive is fast enough, and will rip a 192kbps wmapro in ~10seconds, so it's not like it's crawling, but would there me any advantage? (I'd prefer not to switch, to avoid having a CMOS nightmare)

I doubt you would notice any difference. The bus isn't usually the limiting speed factor for a mechanical drive.

SATA is a whole lot faster than IDE, I would go ahead and do it if I were you, although I am not entirely sure how much of a difference it would be.
