Help! This is making me crazy. Mutable is close, but not quite right. I'm looking for a word that means difficult to pin down, apt to change quickly, always changing.

Dynamic is good.
Fickle is not it--that more implies someone who is always changing their mind.
Capricious means more impulsive--that's not quite right either.

Inconstant is the closest so far...as it is a more neutral word.

Well, since you're looking for a term which means always changing,
I searched for the antonym of constant (constant means fixed).Here are the antonyms.

Antonyms: changeable, fickle, fluctuating, inconstant, irregular, unstable, unsteady, varying, wavering

How about impermanent? I think it's the closest thing we've got.

Um, there are some good words here. If you are looking for a few other possibilities I would say "unstable" or "evolving" or "metamorphosing."

How about impulsive, whimsical, fluid, vacillating, wavering, elusive, shifty, alternating, fickle, unresolved, volatile, inconstant, erratic, impetuous, flighty, temperamental, or mercurial?

Unstable, capricious, inconsistent. A positive word for this is FLEXIBLE.

volatile is a word i personally like

liable to change rapidly and unpredictably, mostly used for the worst
