You won't find it in Baja altho some beaches are nice. Baja is a desert. Best chance is the Yucatan

I don't know about huts - its usually a zoo of trailers in la paz on the beaches in winter. There is a really cool thing on the isle of espirito. This italian guy named Andrea sets up tents on the beach and feeds you and gives you all the supplies you need to stay. It looks really cool. He might have a web site but I don't know it off hand.

There are lots of beaches in BAJA that you can stay at. Most are just south of Mulege on Bahia Conception. If you like surfing or hanging out with surfers than try the beaches south of Todos Santos.

Playa del Carmen, in the Riviera Maya. I saw them when I was walking on the beach in May. Although they hadn't been repaired yet, Contact the mexian tour board, they can help you with any questions you might have.
