it's a frozen Demi loaf that they proof & bake in the unit. Most popular Demi loaves for foodservice are manufactured by Bridgeford Foods.

if I remember correctly...I think its a wheat bread...I asked one night because I can not eat anything with rye seeds and the waitress said its just a wheat bread
