My gran's ****-a-leekie - made with the carcasse of the Christmas turkey, shredded carrot, swede, turnip and leek and a handful of pearl barley to beef it up. (My mother improved on it and so have I, I think.) Yum yum. But I also have a sneaking passion for Heinz cream of tomato served with chunks of strong cheese melted in...........
[Since Yahoo appears to think that the nomenclature of a male chicken is offensive, whatever the context, I guess you'll just have to use a hen. Reckon it should taste just the same.]

Hmm. I like chicken soup, potato soup, and lentils soup, and an easy local cold soup (called tarator) made with cucumbers, yogurt, garlic, a bit of water, dill, and a bit of oil (olive, or sunflower-seed) - it's great for the summer. But the first three... I haven't cooked the first two yet, and the third is easy. They are just plain soups; I am not much into soups anyway, to be honest, but sometimes, they are good.
Oh, and tomato soup too is nice.

I have a few favourites:
Mom's homemade vegetable soup (not tomato based, but made with a roux) - containing every garden vegetable - peas, carrots, green beans, yellow wax beans, kohl rabi, cauliflower, chopped celery stalks, potato. Made extra thick and delish!!
Knorr Griessnockel - a chicken broth with small dumplings made of farina. Produced in Austria, I can't get it in Canaada. I've made it from scratch, but you need farina of the right consistency.
Beef with barley, Knorr Leek, Knorr Fine Herb, Habitant Split Pea with ham.
Finally, I love Hot and Sour soup. I wish I could make it as good as restaurants do. I've tried canned but they were GROSS.

Plain old vegetable soup is always a favourite with me. Though generally only eat soup in the winter. Can't beat coming home on a freezing day and filling up on a lovely boiling hot bowl of soup or homemade vegetable stew. YUM YUM

LEEK AND POTATO SOUP
A smooth, creamy vegetable soup full of flavour. Serve with garlic couscous or cheese straws to accompany.
Ingredients
1 tbsp vegetable oil
1 onion, sliced
225g/8oz potatoes, cubed
2 medium leeks,sliced
1.2 litres/2 pints vegetable stock
150ml/5fl oz double cream or crème fraîche
salt and freshly ground black pepper
Method
1. Heat the oil in a large pan and add the onions, potatoes and leeks. Cook for 3-4 minutes until starting to soften.
2. Add the vegetable stock and bring to the boil. Season well and simmer until the vegetables are tender.
3. Whizz with a hand blender or in a blender until smooth. Reheat in a clean pan, stir in the cream or crè Fraîhe, heat through and serve.

I make homemade italian soup with wholemeal pasta.
Tastes lovely with a brown crusty roll just out of the oven.
My children used to eat that at 6 months old as it's good on fibre.

I love roasted Butternut squash soup too but I think my favourite would have to be Chicken Miso Soup.
