Fresh tomatoes out of the garden.

1. Slice and lightly salt. Toast bread and spread with Miracle Whip, place tomato slices on top, top with another piece of toast.

2. cut tomatoes into 1/8ths, lightly salt. Add peeled, sliced cucumbers, black olives, crumbled feta cheese, 1/2 red onion, sliced thinly. Toss with 1/2 cup of Italian or ranch dressing. Serve over lettuce.

3. Tomato Pie
4 tomatoes, peeled and sliced
10 fresh basil leaves, chopped
1/2 cup chopped green onion
1 (9-inch) prebaked deep dish pie shell
1 cup grated mozzarella
1 cup grated cheddar
1 cup mayonnaise
Salt and pepper

Preheat oven to 350 degrees F. Place the tomatoes in a colander in the sink in 1 layer. Sprinkle with salt and allow to drain for 10 minutes.Layer the tomato slices, basil, and onion in pie shell. Season with salt and pepper. Combine the grated cheeses and mayonnaise together. Spread mixture on top of the tomatoes and bake for 30 minutes or until lightly browned. To serve, cut into slices and serve warm.

4. Fresh tomato salsa
1 1/2 pounds firm, ripe tomatoes , cut into 3/8-inch dice (about 3 cups)
1 large jalapeño chile seeded (seeds reserved and minced; see note), flesh minced (about 2 tablespoons)
1/2 cup minced red onion
1 small clove garlic , minced (about 1/2 teaspoon)
1/4 cup chopped fresh cilantro leaves
1/2 teaspoon table salt
pinch ground black pepper
2 - 6 teaspoons lime juice from 1 to 2 limes
granulated sugar to taste (up to 1 teaspoon)

Set large colander in large bowl. Place tomatoes in colander and let drain 30 minutes. As tomatoes drain, layer jalapeño, onion, garlic, and cilantro on top. Shake colander to drain off excess tomato juice. Discard juice; wipe out bowl. Transfer contents of colander to now-empty bowl. Add salt, pepper, and 2 teaspoons lime juice; toss to combine. Taste and add minced jalapeño seeds, sugar, and additional lime juice to taste. Serve with tortilla chips.

Saute'd fresh asapagus.

Only fresh NO canned. Canned is sick. I hated asparagus until I had it this way at a resturant. Now I love it and it only takes about 5 min to cook. Most people won't touch it, but I bet if they had it cooked well and fresh they'd change their mind.

Take bunch of asparagus and slightly bend them one by one toward the bottems and where the natural breaking point is, the tough end will pop off.

Take a 3-4 tablespoons of olive oil and a sprinkle of Kosher salt and saute until tender crisp in a frying pan. Start eating on the top end 1st. It's the most tender qand if it gets tough toward the very bottem, just don't eat that bite. They are heaven. I also grill them after I have coated them with the same mixture as above.

corn - it's everybody's favorite. If you are cooking it from a can, put 1-2 tablespoons of bacon grease in a small pot or skillet; then drain most of the fluid from the can of kernal corn and add to the grease. Lots of pepper and a little salt. Heat till hot and serve. The bacon grease makes it taste great. If it's corn on the cob, it is best when grilled - pull off husks, string, rub with lots of butter and sprinkle with pepper & salt - then either wrap back into the husks and put on the grill. You may need to sprinkle the husks with water. After about 20 minutes, they have the smoke flavor from the grill, and taste very sweet.

Green and yellow beans.

Boil or steam; then saute with just a tad of olive oil, fresh garlic and finely chopped onion. Hmmm, hmmm good.

And on a lazy day; just boil them, after drained add a dab of margarine, salt and pepper and I can eat a whole bowl of them.

My fav is ladiesfinger (bhindi)

Cut it into small roundels and take half kg of lady's fingers ,chop finely 2 onions, saute the onions in little oil , add chopped 2 green chillies, salt to taste, pinch of coriander powder, red chilli powder and put in the cut lady's finger and cook covered and stirring all the way.
Yummy lady's finger is ready for you. Eat it with chappati or bread.

I like roasting all kinds of veggies in olive oil, salt, pepper and garlic. Potatoes, asparagus tips, zucchini, summer squash, broccoli, onion, red bell peppers. etc.

just make sure to start roasting the thicker veggies first and then adding in the ones that cook more quickly later on.

I like potatos cooked in garlic & then when they are almost done I put cheese & bacon pits on it. SOmetimes I add sour cream.

Oh wow, you gave me a very difficult question!! I dunno how i should answer it because I LOOOOVVVVVEEEEE all veggies! I really can't choose which one I love the most.
I need to eat veggies everyday. I can eat only veggies without meat, but I can't eat meat without veggies!
So, here is the list:
- lettuce, always fresh, with a bit salad dressing or just with sandwiches/burgers
- tomatoes, fresh or cooked (blanchiered), grilled, or stuffed
- potatoes, cooked, smashed, freid, or whatsoever, just love them!
- cucumber, fresh, with dressing or just with salt n pepper
- zucini, grilled or fried with a bit salt
- carrots, fresh as salad, or blanchiered, or just fresh cut n eat it with dip
- beans, cooked, sauteed, fried, or with sauces
- mushrooms, sauteed, grilled, baked, cooked, or even fresh, doesn't matter!
- spinach, cooked with cream sauce, just cooked with a bit salt
- onions (I think onions are veggies too). fried, sauteed or onion rings
- Asparagus, boiled, served with Holländischer Sauce, or just put it inside Chinese crabs soup
- Brocolli, blanchiered, sauteed,or baked with potatoes and cheese
- Cabbage, fresh with 'sambal', or sautee, or cooked in soups
- Egg plants, crispy fried, sauteed, grilled or baked with tomatoes
- Paprika, fresh as salad, stuffed or baked with turkey breast
- Beansprouts, sauteed
- Chillies!! fresh or just mix with whatever. I love chillies!
Well, that's all I can remember now. Sorry, I really can't choose which one I love the most, I juz love them all! ^o^

I love potatoes, they are best when baked in their jackets and filled with cheese and chutney.
