I'll have to say, this is a guess. In some eastern European languages, "potok" is a word meaning "river". Perhaps his ancestral family was named that because they lived near a river?

It's likely Hungarian. Wikipedia says he is of Irish, Italian, and Hungairn ancestry, and that doesn't seem like an Irish or Italian name to me...
