This summer we discovered... Grilled Peaches! Yum!
They sounded awful at first, but we tried them two ways and they are awesome either way!!! Saw it done by Cat Cora on Food Network like this:
Cut peaches in half, remove pit. Drizzle with a bit of olive oil and crushed black pepper (I know, I know... just go with it, it's an odd flavor, but good), place on SUPER HOT grill flesh side down, skins up for 3 minutes with lid closed, no peeking!!! Remove from heat sprinkle with Feta or some other cheese (mozarella was good, too) and enjoy!
We modified it to accomodate the kids like so:
Cut peaches in half, drizzle with a touch of olive oil and sprinkle with cinnamon and sugar or brown sugar. Place on SUPER HOT grill with lid closed for 3 minutes. Remove and top with homemade ice cream, low fat whipped topping or just a dash of cream. HEAVEN! Like cobbler but without the carbs in a crust and you just go easy on sugars and such.
Good luck.
