Jubilees, Book of Enoch, the Shepherd of Hermas, 1 Clement, Acts of Paul are aparently in their version of the Bible, does anybody know more about their version of the Bible?

Yes, these are Apocryphal or Eschatological (meaning dealing with "End Time events")

Apocryphal:
Of questionable authorship or authenticity.

Eschatological:
The branch of theology that is concerned with the end of the world or of humankind.

As such, these book are not "really" expected to be written by Enoch, however, the Jewish People themselves had them "in their libraries" at least from 400 B.C.E. on. So, they ARE at least from 400 B.C.E., speaking of The Book of the Book of Enoch anyways. It was so old, that at the Nicean council, that was the "reason" that was given for leaving it out. The Book of Job was almost left out for this reason also. The Book of Enoch deals in 2 parts, first is the part of the Angels marryin the Daughters of Men. They have horrible children who then have even worse appetites than their fathers, polluting and corrupting the earth in terrible ways. Eating humans and anything they can get their hands on. They mate with everyone they please, along with over 200 species of animals, thus creating the legend for the Egyptian Gods, 1/2 human, 1/2 animal. The 2nd part of The Book of Enoch deals with the Dream of the Animals and what it means. This is the "End Time" part and denotes separating work of the Lambs from the Goats, etc. This is an extraordinary book, mostly saved through the work of the Essenes, near Qumran:

The Book of Jubilees is just as rich in knowledge and information as the Book of Enoch and is equally rich in heritage. It to deals with the Fallen Angels and the Daughters of Man. (see Genesis 6:1-4.)

I can tell you what I know, and I do not know about all of the books, sorry. The book of Enoch is mentioned in the normal canonical Bible. While it is mentioned the writing was not included in the by early biblical scholars.
Shepherd of Hermas is a very late writing that is widely unaccepted in biblical circles because it was written two to three centuries after the death of Jesus.
Acts of Paul is very likely the book of Acts found in the normal canonical Bible.
