TWo could work.

Three or four would be best.

You want a "full" shot of the person with the guitar.

You want "another angle" left or right, same as the full shot.

YOu want a Close up "person singing front view"

This is enough to edit.

Another would be to have the FULL room and zoom in on the person.

Anotehr would be a secondary angle, maybe left side instead of right side.

Generally, TV shows use three or four cameras.

One is tight on the subject.

One is wide on the Subject.

One is "another angle."

Mimimalistically

Two full shots, one straight one, one at an angle.

Third is random.

Idealistycally, full shot striaght, full shot right, full shot left then a random that zooms and pans and gets closer.

depends on whether you want it easy or hard.

easy
1 camera, move and zoom to add some interest, take audio from the cam, no editing.

hard
2 cameras, record the whole song from different angles and get the audio from the mic the singers using. (im not too good with sound so experiment yourself) im thinking if you got a lav mic for the singer and then a mic for the guitar (or if its already electric) run those two into a mixer, and then run that into the camcorder.

if the position and/or location of the camera doesnt allow a line or mic to be plugged into it, use a separate recorder(minidisc, mp3 players sometimes are good enough too) and use a clapper (finally you get to use one) or just use your hands, to synch the sound.

get at least wide of the whole person, then the other camera can be used for tighter shots. depending on the song, go crazy on the zoom, or barely touch it. its all up to you. and if the walls of the room are one color, you could try keying out the walls and putting something else in the background. if you really wanna wear yourself out, have him/her record the song first in a quiet room (or studio if you have one) and then play the song and have him lip synch to it while you record from any imaginable angle as many times as you want. just sucks when editing.

finally, take all your video (and audio if recorded) and put them into an editing program. i mean something like adobe premiere pro or vegas or whatever, cos if you dont have that, then dont try this step. and even if you do, know what you are doing before you do this. please. it sounds so easy, but i guarantee you that it will drive you so crazy youd wish you were dead, if you dont know how to use the editor. i wish you luck. and tell me how the video turns out.

One, with a moving camera man, not mutiple peices of equipment. Editing that on professional software is difficult. On free/cheap software. Impossible.
