Is there a scripture that says a person would get back 7 fold of what Satan has stolen from them?

That is a denominational doctrine teaching of many churches... based on the number 7 being used many times in the Bible in relation to the things of God.... Fact is... to those that know and love the Lord they will recieve many many more times than 7 ... the blessings of the Lord in comparrison to what satan has done.

They take this scripture and apply it to Satan --- in the bible Satan comes to kill, steal and destroy.
Proverbs 6:31 Yet if he is caught, he must pay sevenfold,
though it costs him all the wealth of his house.
(In scripture it's applied to a man that has been caught stealing... because it goes on to name other offenses.)

(This scripture comes prior to verses 31)
30 Men do not despise a thief if he steals
to satisfy his hunger when he is starving.

This verse if often used in describing Satan's punishment if he steals from a believer and then is subsequently "called out" or "caught" by the believer who stands on his authority

Don't think so. You may be thinking of Rev 18:6 Reward her even as she rewarded you, and double unto her double according to her works: in the cup which she hath filled fill to her double.

Yes it does, but I can't seem to find it right now. But maybe not thoes exact words. Something to that, for your formor shame. It is in there though, keep looken.
