Marinade for Steak
Ingredients
(4 servings)
1 c Olive oil
1 x Or:
1 x Or:
2 tb Soy sauce
1 x Coarsely ground pepper
1 ts Italian seasoning
1 tb Worcestershire sauce
1/2 c Sherry vinegar
1/2 c Wine; red or white
1/4 c Lemon juice
2 ea Garlic cloves; sliced
2 tb Freshly chopped herbs
1 x Red peppercorns; if desired
1 ts Sugar
Instructions
"... Ingredients in a marinade can be varied, but it is important to use wine, vinegar, lemon juice, or some acidic liquid to break down the connective tissues. This process will make the steak more tender. Remaining marinade ingredients add flavor." Use a good-quality olive oil or walnut oil; add good-quality wine or vinegar and a combination of fresh and dried herbs, seasonings, garlic and soy sauce to make a flavorful marinade. 1. Place all ingredients in glass screw-top jar; shake vigorously. Arrange meat in shallow glass dish; pierce with a fork. Pour marinade over meat; turn to coat. Cover and refrigerate several hours or overnight, turning meat occasionally. 2. Remove meat from marinade; pat dry. Remove any pieces of spices or herbs that may stick to meat. This recipe is a steak marinade, but the ingredients can be adapted for other meats using the same techniques.

If you make up a big batch and use just what you need, it's OK to store it, but once raw meat has been in a mainade, unless you boil the heck out of it, it's not safe reuse.
However, easy and so quick you don't need to store it is a cup of Kikkoman soy sauce, 2 teaspoons granulated sugar, a one inch piece of fresh ginger, grated, a few fresh grinds of black pepper and a crushed clove of garlic. No need to chop the garlic but you may if you wish. (An option is to add 1/4 pineapple juice to this for a Hawaiian theme.) This can easily be doubled, tripled, or as many times as you wish. No salt needed, the soy has plenty.
For easy marinating that uses less "juice" place the meat and marinade in zip-closure bags and express as much of the air as possible. This keeps marinade in contact with the meat more evenly than turning. Try to marinate for at least an hour.
Leftover or extra marinade can be used to baste while grilling or broiling. The sugar helps meat to brown nicely, but it may also burn more easily so watch it.

Here it is simple and easy. Mix 1/2 and 1/2 A-1 sauce and italian dressing. I usually marinate the steak overnite to help make the meat tender when you eat it..

* 2 tbsp. prepared yellow mustard
* 1/4 cup worcestershire sauce
* 1/4 cup soy sauce
* 1/2 tsp. minced garlic (1/4 tsp. garlic powder)
* 1 tbsp. minced onion (1 tsp. onion powder)
* 1/4 tsp. red pepper flakes
* 1/2 cup water to thin marinade
Place meat and marinade in ziploc baggie and place in container in fridge overnight or for at least two hours. Recipe can doubled or tripled if necessary.

anything with a citrus base is a good marinade cause it tenderizes the meat..........I use a little lemon juice mixed with cajun spices and worcheshire sauce. It needs to marinate at least 48 hours,

Any kind of home-made or prepared bottled non-creamy dressing is good. (The creamy dressings might work too; I've never tried them.) The combination of oil and acid (vinegar) tenderizes and moistens. You can add your own seasonings to it if you want. e.g. onion powder, more garlic (never enough garlic), basil.
