Texas Caviar is great! You can serve it in a number of different ways. You can serve it as an appetizer with chips, bread, or slices of french bread (or the like, you can toast it lightly, too). You can serve it as a side dish, too, if you want to. It works great, especially for picnics. You can also use it as a topping for grilled fish or chicken, too, like a corn salsa. Some serve it just as it is as a salad, too.

Texas caviar (I'm going to make some - sounds yummy)
1 (15 oz) can black-eyed peas, rinsed and drained
1 (15-1/2 oz) can white hominy, drained
2 tomatoes, seeded and chopped
4 green onions, thinly sliced
2 garlic cloves, minced (I used 4)
1 medium-size onion, chopped
1/4 cup chopped fresh cilantro
1 (8-oz) jar hot picante sauce (I used salsa)
2 tablespoons lime juice (optional)
Combine first 9 ingredients, and, if desired, lime juice.
Cover and chill at least 2 hours. Serve with tortilla chips, or wrap in flour tortillas.
Yield: 4 cups. (I think it's actually a bit more but I used about 4 little tomatoes, so that may have made a difference)

Texas Caviar has been around for years, it is primarily made with black eyed peas, red and green bell peppers, some minced jalapena, white onion or green scallions and a dressing of vinegar and oil with seasoning of salt, pepper and maybe some cumin (fresh cilantro if you can get it). Great with crackers, just think of it as another kind salsa and make in the amounts you wish. Enjoy@

Meat eaters generally serve it as a side dish. Vegetarians eat it as a main course. I eat a lot of vegetarian meals, and it's yummy served in a pita bread.
Be sure to cut the jicama into small pieces, because they will maintain their crunch, while the beans and corn and peppers are softer. You don't want people to have to spear a piece and gnaw on it.
Hmm. My recipe is different. Black beans, chopped red peppers, white onions, and jicama with cilantro and garlic.

Potato salad or coal slaw are continually good area dishes which could bypass with something. French fries are good sides too. Rice and beans are good sides besides. you may also do fried squash. somewhat a lot you may do any vegetable, beans, or salad i wager.
