I like everything omelets, where you scout your vegetable drawer and chop up what you find. The best omelet I had was at a friend's cottage. He sauted onions and peppers and added a generous helping of cooked bacon (you know the bags that are sold in Costco and Sam's Club, etc.), the eggs and seasoned it all up. Then he topped it all with great cheddar cheese that melted by the time it was served!

When I make them at home, I add shredded carrots, bell peppers, tomato's,black olives, mushrooms and onions cheese of any kind. then I top the omelet with holidaise sauce
