I have lost it for many years, but I remember it was made with dry pudding mix, not mixed or wet, and it had oatmeal, and cream of tarter. Those are the only ingredients I remember. Anyone know where I can find it?

Butterscotch Oatmeal Cookies (Source: Miami Herald, 2-15-96)
• 3/4 cup shortening • 2 tsp sugar • 1 egg • 1 tsp vanilla • 1 pkg (4 servings) butterscotch pudding mix • 1 1/2 cups oats • 1 cup flour • 1/2 tsp salt • 1/2 tsp baking powder • 1 1/2 tsp cream of tartar
Preheat oven to 350 degrees F. Grease cookie sheets. Cream shortening, sugar, egg and vanilla. Mix together the dry pudding mix, oats, flour, salt, baking soda and cream of tartar. Stir dry ingredients into creamed mixture. Roll the mixture into balls about 1 1/2 in diameter. Place on cookie sheet and flatten slightly. Bake about 10 minutes.

Oatmeal Pudding Cookies
• 1 cup butter flavored shortening • 3/4 cup packed brown sugar • 1/4 cup white sugar • 1 (3.5 ounce) package instant butterscotch pudding mix • 2 eggs • 1 1/4 cups all-purpose flour • 1 teaspoon baking soda • 3 1/2 cups rolled oats • 1 cup raisins (optional)
Preheat oven to 350 degrees F (175 degrees C). Line baking sheets with parchment paper.
In a large bowl, cream together shortening, brown sugar, and white sugar until smooth. Blend in instant pudding, then beat in eggs until the batter is light and fluffy. Combine flour and baking soda; mix into the batter. Stir in oats and raisins. Dough will be stiff. Drop dough by spoonfuls onto the prepared baking sheets.
Bake for 8 to 12 minutes in the preheated oven, or until firm. Cool on wire racks.

Don't know, but I just follow a basic oatmeal cookie recipe and add butterscotch morsels. It tastes great!

i tried searching for recipes but all i found were ones that used butterscotch chips, not pudding. sorry.
