I live in the Midwest, but I'm really fond of seafood. What I was wondering is, if I want to cook a recipie calling for red mullet, or any other coast fish for that matter, what's a good way to get around the lack of fresh fish in St Louis? Can anyone draw me some comparisons between common and uncommon seafood ingredients?

There are several small aquaculture farms in Illinois where you can get fresh Tilapia. I know one is near Bloomington, Ill. because that's where I went to college. Tilapia is a whitefish that should be a close match to any mullet recipes.
