PRIDE OF IOWA COOKIES:
1 cup shortening
1 cup brown sugar, packed
1 cup granulated sugar
2 eggs, beaten
1 teaspoon vanilla extract
2 cups flour, sifted
1 teaspoon baking soda
1 teaspoon baking powder
1/4 teaspoon salt
1 cup flaked coconut
1/2 cup chopped walnuts
3 cups rolled oats, quick-cooking
Cream together; shortening and both sugars.
Beat in eggs and vanilla. Sift flour, baking soda, baking powder and salt and add to egg mixture. Blend well. Stir in coconut, walnuts and rolled oats. Drop by teaspoonfuls onto greased cookie sheet (I use parchment paper). Bake at 375 degrees for 8 to 10 minutes. Cool on wire racks.

chocolate chip oatmeal cookies!!!!

the best recipe I had ever tried is right on the box of oatmeal, nothing ever beat that as far as I am concerned,
and you can even add nuts and raisins to it

OATMEAL LACE COOKIES
------------------------------------
2 STICKS OLEO{FLEISCHMANN FOR BAKINGG IS BEST;NO DIET}
3 CUP UNCOOKED OATS
4 tBSP. FLOUR
1 1/2 CUP SUGAR
2 TSP. BAKING POWDER
PINCH OF SALT
2 BEATEN EGGS
2 TSP. VANILLA
1 CUP CHOPPED NUTS{I USE PECANS}

COMBINE FLOUR, SUGAR,BAKING POWDER AND SALT AND SIFT.DROP BY THE TEASPOON ON FOIL,NO GREASE.BAKE AT 350* ABOUT 10 TO 13 MINS. UNTIL LIGHT BROWN.WHEN COOL,PEEL OFF FOIL.
THIS IS MY DOUBLE RECIPE AND MAKES ABOUT 60 COOKIES.YOU CAN MAKE THE DOUGH AND KEEP IN THE REFRIGERATOR {OR FREEZER} UNTIL READY TO BAKE.

" Five Roses Cook Book" It has alot of great ideas. Get this at the library or go to search for Five Roses . I know it's in canada for sure.
