I love sweet Vidalia onions and want to buy a bucnch and freeze them so I can enjoy them all winter long...do I just cut and freeze...do they need to be blanched? Thanks...

NO, NO DO NOT FREEZE THEM!!! THE BEST WAY TO KEEP SWEET ONIONS (WE STORE WALLA WALLA'S HERE IN OREGON) IS TO DO THIS.......

DROP AN INDIVIDUAL ONION INSIDE OF A PAIR OF NYLON PANTYHOSE OR INDIVIDUAL STOCKINGS. TIE THAT ONE OFF AND DROP ANOTHER IN AND REPEAT THIS PROCESS UNTIL THE HOSE IS FILLED.
WE HANG OUR INSIDE THE GARAGE (DARK & COOL) IF YOU LIVE IN A REAL HOT CLIMATE PUT THEM INSIDE OF A CLOSET. THEN JUST CUT AN ONION OFF W/ SCISSORS EACH TIME YOU NEED ONE. THE OTHERS WILL REMAIN DORMANT FOR AT LEAST 3-4 MONTHS. WE COULDN'T BELIEVE HOW GREAT THEY WERE IN JANUARY....

Freeze onions all the time. They do not have to be blanched. I just dice them up and put them in freezer bags. The snack size is a nice size and will hold about 1/2 cup. Just right for most recipes.

I sure have saved a lot of money on onions since I started doing this. The only thing is you cannot use them in recipes that call for fresh onion.

If you like cooking with fresh onions, but frequently toss an unused portion, try freezing it! The following method works for fully mature onions:

1. Wash, peel and chop raw, fully mature onions into about 1/2" pieces. There is no need to blanch onions.

2. Bag and freeze in freezer bags for best quality and odor protection. Package -- flat -- in freezer bags (see picture) to hasten freezing and make it easier to break off sections as needed. Express out the air and place bags on cookie sheets or metal pans until onions are frozen. Then, restack bags to take up less room.

3. Use in cooked products, such as soups and stews, ground meat mixtures, casseroles, etc. For most dishes, frozen onions may be used with little or no thawing. (Will keep 3-6 months.)

You don't need to blanch them. You just chop or slice and freeze. The absolute best way is with a food saver that sucks out all the air to prevent freezer burn. Especially since you will be storing for the year.

No they do not need to be blanched. However, they will not be crisp when they thaw. Will be usefuk for cooking though. You also freezer green peppers and celery wihoutt blaching. All three of these foods ahve a large amout of water in them. If you blanch you lose the flavor.

humm...my mom didn't freeze them...But she would dry them.
