Baked Pizza Roll-Ups
1 can (8 oz.) refrigerated crescent roll dough
1/2 cup pizza or pasta sauce
1-3/4 cups (7 oz.) Sargento® Bistro™ Blends Mozzarella & Asiago with Roasted Garlic
1-1/2 tsp. Italian seasoning
2 Tbsp. Sargento® Fancy Parmesan Shredded Cheese

Separate crescent rolls into triangles. Spread thin layer of pizza sauce evenly over each triangle; top with Italian shredded cheese and Italian seasoning. Roll up each crescent triangle, starting at wide end; place on baking sheet coated with non-stick cooking spray. Sprinkle Parmesan cheese over top of each pizza roll-up. Bake in preheated 375°F oven 15 minutes or until golden brown. Substitution: Sargento® 6 Cheese Italian Shredded Cheese may be used in place of Sargento® Italian with Garlic Shredded Cheese.

Moroccan Cheddar Couscous
1 Tbsp. olive oil
1 medium red bell pepper, diced
1/2 cup chopped onion
2 cloves garlic, minced
1 can (14-1/2 oz.) chicken broth
1 cup couscous, uncooked
1-1/2 cups (6 oz.) Sharp Cheddar Shredded Cheese, divided
2 Tbsp. chopped fresh cilantro

Heat oil in large skillet over medium heat until hot. Add bell pepper, onion and garlic. Cook 6 minutes or until vegetables are tender, stirring occasionally. Add broth; heat to a boil. Stir in couscous; cover and remove from heat. Let stand 5 minutes or until broth is absorbed. Fluff couscous mixture with a fork. Stir in 1 cup cheese. Sprinkle with remaining cheese and cilantro.


Ground Turkey Stroganoff
1 (8 ounce) package uncooked egg noodles
1 tablespoon vegetable oil
1 pound ground turkey
1 tablespoon minced onion
1 cube chicken bouillon, crumbled
1 (10.75 ounce) can condensed cream of mushroom soup
1/2 cup water
1 can (stems and pieces) mushrooms, drained
1/2 cup sour cream
salt and pepper to taste

Bring a pot of lightly salted water to a boil. Place the egg noodles in the pot, cook 6 to 8 minutes and drain.Heat the oil in a skillet over medium heat. Place the turkey and onion in the skillet and cook until turkey is evenly brown and onion is tender. Mix in the bouillon. Stir the cream of mushroom soup and water into the skillet. Cook and stir until heated through. Stir in sour cream and mushrooms, season with salt. Serve over the cooked egg noodles.


CHICKEN WITH CUCUMBERS
2 tbsp. olive oil
1 tbsp butter
3 boneless, skinless chicken or turkey breasts
1 large cucumber
1/2 an onion, sliced thin
1/2 tsp. ground cumin
1/2 tsp. ground mustard
2 cloves garlic, minced
1/2 cup chicken stock ( 1/2 cup water and 1 chicken boullion cube works too)
3 tbsp. sour cream

Heat oil and butter in skillet. Cube chicken and add to pan, cook thoroughly. Take cucumber and peel, slice in half, seed with a spoon and dice small. When chicken is cooked golden brown, remove from pan. Add onion and cucumber. Cover and cook 1-2 minutes. Add chicken stock, garlic, cumin and mustard. Cook 5-7 minutes more until onion and cucumber are tender. Return chicken to skillet. Stir in sour cream. Serve over cooked linguine, rice, mashed potatoes, etc.

There is a really good cookbook thats called the "On Your Own" cookbook, and its exactly a college survival guide for healthy eaters. I find I often dont have much time to cook, and when I hit really busy periods, I live off of Amy's Organic frozen dinners (The indian food and veggie meatloaf are both great) Or fast naturals meals. They have a great thai noodle dish with baby corn and lemongrass. They cost about what you would pay for a fast food combo meal, but SO much better for you. They get me through fairly well. Frozen chicken breasts, various rissottos and rice type things are a cubbord staple, fresh baby spinach is nice to have on hand. I mix rice or risotto or quiona (sp?) with the spinach in a pan and add cheese and thats good. also ray with a vinagerette ot just jome lemon juice even. and if you arn't allergic, peanuts are a good snack. A friend went through med school and swore if he ate peanuts while studdying he remembered everything better. Sounds weird, but they help on late night cram sessions. I think its a combo of the extra protien and the chewing that keeps you awake, but at any rate they are a good healthy snack to have on hand. baby carrots are also a good snack.

Salad. Buy a bag of mixed baby greens, throw some seeds on top, add some grated carrots or grated beets, and serve with dressing! Serve it with some fresh bread (slice it immediately and freeze any you don't use).

Soup. Make a big pot of homemade soup (most recipes serve eight) and freeze the leftover portions. I like to make a "chowder" with red peppers, corn, tomatoes and red potatoes. Cream of tomato is very simple, as is a lentil/spinach soup with lemon for flavour. Serve it with the leftover frozen bread.

Pasta. Cut up some zucchini, eggplants, peppers and tomatoes. Toss them in olive oil and throw in some fresh herbs. Roast them in the oven while you boil water and cook the pasta. When the pasta comes out, toss it with olive oil and the vegetables, then sprinkle some grated parmesan on top.

If you're entertaining, go Mexican. Get a few small serving bowls. Put one ingredient in each bowl: chopped tomatoes, roasted and chopped bell peppers, shredded lettuce, grated cheese, salsa, sour cream and guacamole (or some simple mashed avocado). If you want meat, go with shredded chicken or lean ground beef. Heat up some tortillas in the microwave and let your guests go crazy.

I use to buy microwaveable frozen chicken breasts.. they cook in about 5-8 minutes. If you buy some whole grain wheat buns..tomatoes, lettuce and light on whatever sauce you like.. but watch the fat.. very healthy sandwich.
Also.. Healthy Choice frozen dinners.. for "quick" dinners are healthy.. if you don't mind the salt.

I am not sure what you have to cook on, but a simple recipe is to marinate boneless chicken in a marinate bought at store and cook it on top of stove, or heating pad, serve with mixed veggies topped with basil and one tbs olive oil and that is a nice healthy meal

mix tuna and mayo and spread it on a wheat bread
add sliced tomato, lettuce, cucumber,
sliced boiled eggs and pickles if you want
