Super Simple Peanut Butter Cookies (makes about 30)
1/2 cup (125ml) butter or margarine,softened
1/2 cup (125ml) crunchy peanut butter
2/3 cup (150ml) granulated sugar
1 egg
1&1/2 (375ml) all-purpose flour
1/2 tsp (2ml) baking powder
1/3 cup (75ml) raisins (optional)
Preaheat oven to 350 oF (180oC). In a large bowl,cream butter,peanut butter and sugar. Beat in egg. In another bowl, stir together flour and baking powder. Stir into peanut butter mixture. Stir in raisins. Form dough into 1&1/4 inch (3cm) balls. Place on ungreased baking sheets, spacing well apart. Press each ball with the back of a fork to make a pattern. If desired, decorate the top with chopped peanuts or dried fruit. Bake one baking sheet at a time, in the centre of the oven for 12-15 mins or until golden around edges. Cool on baking sheet for afew minutes before transferring to wire racks.

This is one from my mom's church cookbook it's pretty good and easy to remember:
2c. peanut butter 2c. sugar 2 eggs 1 tsp. vanilla
Mix ingredients well. From rounded teaspoonfuls into balls. Place on ungreased cookie sheet and press with tines of fork. Bake at 325 F for 13 minutes. Cool on cookie sheet.
