INGREDIENTS:
* 1 onion, finely chopped
* 1/4 cup honey Dijon mustard
* 4 (6 ounce) fillets catfish fillets
* garlic salt and pepper to taste
* dried parsley flakes
DIRECTIONS:
1. Preheat the oven to 350 degrees F (175 degrees C).
2. In a small bowl, mix together the onion and mustard. Season the catfish fillets with garlic salt and pepper. Place on a baking tray and coat with the onion and honey. Sprinkle parsley flakes over the top.
3. Bake for 20 minutes in the preheated oven, then turn the oven to broil. Broil until golden, 3 to 5 minutes.

Cajun Compromise Catfish
INGREDIENTS:
2 pounds catfish fillets, cut into 2 inch pieces
1 cup milk, or as needed
1 egg
1/4 cup all-purpose flour
1/4 cup cornmeal
2 teaspoons ground black pepper
2 teaspoons ground mustard
2 tablespoons Cajun seasoning
1 dash pepper sauce, such as Franks® Red Hot® or Tabasco⢠(optional)
1/4 cup oil for frying, or as needed
DIRECTIONS:
Soak the fish pieces in milk for at least 30 minutes.
In a small bowl, whisk together the egg and hot pepper sauce. In a separate bowl, stir together the flour, cornmeal, pepper, mustard and Cajun seasoning. Dip fish pieces into the dry mixture, then into the egg, then back into the dry mix. Set on a plate in the refrigerator and chill for about 15 minutes. This will help the batter stick to the fish.
Heat more than enough oil to cover the bottom of a large heavy skillet over medium-high heat. Fry fish pieces for 3 to 4 minutes per side, or until golden brown. Depending on how much and what kind of Cajun seasoning you used, some of the breading may get darker than the rest.
Drain the fish on paper towels and serve with hot sauce or tartar sauce. Eat and enjoy.

Well, I have tons! I'm from the south...I just don't know whether you want it fried or what!
Fried:
Preheat a deep fryer or a heavy duty boiler filled about 1/4 to 1/2 full of peanut oil to about 350.
Mix some corn meal and flour together. Add to the corn meal some salt, pepper and a pinch of garlic and onion powder. Beat a couple of eggs together...dip the fish in the egg and then coat it with the corn meal mixture. Fry until golden brown.
Broiled
Preheat broiler to about 400. Soften, (not melt) butter. To the butter add some lemon pepper and garlic powder, salt and pepper. Spread over the fish and broil about 15 minutes or until fish is flakey.

catfish fillet
1 1/2 cup breadcrumbs
1 Tbl Cayenne pepper
1/4 cup flower
1 cup butter milk
1 beaten egg
Mix wet ingredients together and dip catfish in.
dredge through dry ingredients (after mixing them together)
and fry in oil heated to 300 degrees Fahrenheit (takes about 5 min depending on how thick the fillets are)

1 12 ounce beer
mix them together and wait at least 3 hours then drop the catfish in it then pan fry......its delicious! This is easier than anything u can find just make sure u let the batter sit for at least 3 hours, oh and u might wanna add some seaford essence to the batter.....

Yes, here is a great family fish recipe.
1lb catfish fillet
1can beer
1cup cornmeal
oil
Cut catfish into about 4 to 5 inch pieces.
Pour beer into small bowl and add fish. Let fish set a few min.
Pour cornmeal into another small bowl.
Heat oil ,(About 4 to 6 inches from rim of deep sided pan.) oil should be to just about boil point, but not smoking. (BE VERY
CAREFULL! ! ! OIL WILL BE VERY HOT !)
Take a piece of fish from beer and dredge into cornmeal, coating both sides of fish. Fry in hot oil. Set a large bowl to the side, with paper towel in the bottom of it to put the fish in after it is done frying. This will absorb the excess oil.
add salt and pepper to taste.
Garnish with fresh cut lemon wedges,and serve with tarter sauce, or any sauce you prefer.
Fish is great with Cole slaw, and rice or french fries.

Fish Chowder
4 potatoes, peeled and diced
1 onion, chopped
4 slices bacon, diced
1/4 pound fillets, chopped
1/2 can evaporated milk
1/4 teaspoon freshly ground white pepper
1. In a large stock pot cover potatoes with enough water so they are fully covered. Bring to boil, then reduce to a simmer.
2. In a saute pan cook bacon until crispy (rendering the fat from it) crumble for topping or for another use. Saute the onion over medium heat, until onions are soft. Add to potato mixture.
3. Once potatoes become soft, and the broth has a milky look to it, add cut up fish fillets. Heat until fish fillets are cooked through.
4. Add enough milk product to bring soup to your desired taste and texture. Season with white pepper and serve.

“LONG JOHN SILVER” STYLE FISH #1
If you like the batter dipped fish from Long John Silver, then you’ll like this recipe, too. This recipe is simple & easy, & can be done just as easily at a campsite as at home, I know, I’ve done it many times. There’s nothing like freshly caught fish cooked this way!

salt & pepper, to taste
hot oil, enough for deep frying
In large pot heat oil to proper temp for deep frying. You will need 2 bowls containing flour, & they should be deep enough to easily dip fish into. Season one bowl of flour with salt & pepper (your discretion). In the second bowl of flour, while stirring very gently, add just enough club soda to make the batter the consistency of buttermilk. VERY IMPORTANT: overstirring will break down the fizz in the club soda, this you do NOT want to happen. Dredge a piece of fish in the bowl of seasoned flour, & shake off excess flour. Then dip immediately into the bowl of batter, & drop fish gently into the pre-heated oil. Repeat process with each piece of fish. You can cook several pieces of fish at a time, just depends on the width of your deep frying pot. You just want to make sure you have plenty of room for the fish to freely cook. Cook fish until golden brown. Fish should float to top of oil when done. Remove fish from oil, & place on paper toweling for just a few seconds to catch excess oil. Remove to heated platter, & serve with favorite side dishes. NOTE: Be sure to carefully dip or strain off any stray pieces of batter from the hot oil before adding additional batches of fish.
NOTE: If you do not have club soda on hand, then you can use beer, but this will change the flavor of the batter. Or you can use diet lemon lime-type (clear) soda pop. The reason for using diet soda pop, instead of regular soda pop, is that the sweetness will cook out of the diet pop, but not the sugared pop. You DO NOT want your batter to have a sweet taste. (Tip: When storing leftover club soda, store it upside down, it will hold its fizz longer.)

2/3 c. club soda
1/3 c. lemon juice
1 egg
1/2 c. Bisquick
1/2 c. self-rising flour
Beat all above ingredients together until smooth; let stand 10 minutes. Heat oil to 385ï°F. In small bowl put 1/2 c. club soda, in another 1/2 c. self-rising flour. Dip fish first into soda, then into flour. Set fish on cookie sheet till all the fish has been coated; let dry a few minutes.
Dip fish in previously made batter, let excess drip off; & deep fry 3 or 4 minutes per side. Shrimp can be done the same way if peeled & deveined first.
