爸爸 or simply 爸 is the more affectionate term "Dad".
父亲 or simply 父 just means father.

By the way, these are in simplified Chinese. For traditional Chinese characters, the only difference is 父亲 becomes 父親.

Those upstairs answers have been informative, I guess. Here I'd like to make a supplement. Nowadays, we have a more colloquial and humorous symbol for Dad in Chinese. This is "老爸" (Lao Ba), which means Old Father literally. This can be used in a case where you and you father are very good friends, not only son-and-father relations.

爸, 爹, 父 are the ones that I can think of. Each one means father, but are all a little different. The first one is more informal, the second one is more literary and formal (used more in older times), the third one is neither too formal or informal and is often used, especially in words like 父亲

父 I'm not chinese though, Korean people know alot of chinese letters =) c.f. 母 this is the symbol for mom in chinese

爸爸-ba ba with the 'b' sound.
父亲-fu qin>qin sounds like chin...sort of...
爹爹-die die.Not pronounced 'die' as in pass away.Something like 'di-ye'.
