GARDEN VEGETABLE SOUP
Recipe from WW Getting Started Book

2/3 cup sliced carrot
1/2 cup diced onion
2 cloves garlic
3 cups fat free broth (beef, chicken or vegetable)
1 1/2 cups green cabbage leaf -- diced
1/2 cup green beans
1 tablespoon tomato paste
1/2 teaspoon dried basil
1/4 teaspoon dried oregano
1/4 teaspoon Salt
1/2 cup zucchini -- diced

In a large saucepan, sprayed with nonstick cooking spray, saute the carrot, onion, and garlic over low heat until softened, about 5 minutes. Add broth, cabbage, beans, tomato paste, basil, oregano, and salt;
bring to a boil. Lower heat and simmer covered, about 15 minutes or until beans are tender. Stir zucchini and heat 3-4 minutes. Serve hot.

I have a lot of weight watchers recipes I've collected over the years. Here is one of my favorites:

Franks and Beans
I think I got this recipe from a Weight Watchers magazine about 10 years ago. Its VERY good.

Servings 4 | Points 7

* 12 oz dry navy beans
* 1/4 cup molasses
* 1 tsp Dijon mustard
* 1/2 tsp table salt
* 1/4 tsp black pepper
* 2 medium turkey and chicken franks
* 1 cup chopped onion


In Dutch oven, combine beans and cold water to cover; bring to a boil over high heat. Let stand, covered, 1 hour. Drain beans and return to Dutch oven; add 4 cups cold water. Cover and bring to a simmer over medium heat. Cook about 30 minutes. Preheat oven to 350. In medium bowl, whisk together molasses, mustard and pepper. Stir into beans. Add the franks and onions. Cover Dutch oven and bake 1 1/2 hours, or until beans are tender, stirring occasionally. Add more water if necessary.

Pound flat 1 lb chicken breast. Cut into four pieces.
On each piece, place one slice deli ham and one slice low fat swiss.
Roll up and seal with a toothpick. Spread a tsp. of honey mustard on each, and coat with breadcrumbs.

Bake in oven till juices run clear. Each roll=7 pts.
