Depends what you're after. The restaurants around Prince's St. can be a bit expensive, but I'd recommend the Mussel Inn in Rose Street if you like seafood in a good bistro setting.
A little further away, towards George Square, there are a lot of more reasonably-priced restaurants. (Still within about five minutes walking distance of Prince's St., though.) For example, there's Home Bistro on West Nicholson Street, which is traditional home cooking; lunch for two courses is about £7. There's Phenecia, also on West Nicholson St., which does tapas at a very reasonable price. On Potterow, there's Mariachi, a new Mexican restaurant that's just opened, with a two course lunch for about £6.
So, lots of choice - enjoy!

Princess Street gardens can be fun. Plenty of food shops across the road, with sandwiches. The area in front the the Art Museum at the bottem of the Mound is a good place to watch street entertainers and eat a sandwich, as is the top of the Royal Mile.
If you are taking your own sandwiches then go for a walk up Arthur's seat on a nice day.

Would suggest u check out www.5pm.co.uk for any offers -they have some great restaurants.
In the city centre would suggest u try La Petite Folie -very reasonable and good french food (also great for dinner). They have 2 restaurants.
If u venture out to the Shore are in Leith I can recommend The Waterfront (all round great food) and Mia for perhaps the best indian/thai food in Edinburgh.

I loved a restaurant on the royal mile called The Hub, its in Castle Hill. It has a good selection of Italian-rather-than-French modern British food, with good-value food.
But for a list of great places to eat I have listed a link below.

Got to agree with Blondie. The Witchery is fab - wee bit expensive but excellent for a special evening out. Enchanting interior too.
Enjoy !

The Ghurki which is a Nepalese restaurant in Bruntsfield. Good food, realatively cheap and just a little bit different!
