Beer can chicken is delicious, impressive, and easy. WalMart has beer can roasters for under 5 dollars, but if you don't want to get one it works just as well to put the beer can and chicken on a roasting pan in the oven. Dump 1/2 the beer out and make a few extra holes in the top. Rub the chicken skin with some oil and then your favorite seasonings. Put some of the same seasonings in the beer can as well. But the chicken on the beer can, roast in a 350 degree oven for about an hour-hour and a half. Great with corn on the cob and mashed potatoes.

I have a lot of favorites ...

here is one menu that varies depending on the season:
- spicy shrimp consumme
- crab rangoon
- vegetarian lo mein
- sweet coconut milk shrimp with cilantro & Thai peppers
- chicken satay with a peanut sauce

I also enjoy comfort food menu's:
- o-bone roast in a pressure cooker with potatoes & carrots ... worcestshire ... simple and so comforting. I usually serve banana cream pie for dessert .. or some kind of cream pie.

Lately, I've been making chili verde with a pork roast. I go to the farmers market and buy fresh anaheim peppers ... roast them on the grill ... cut up a boston butt pork roast .... slow-cooked verde after about 4-5 hours ... its a dream in the mouth!

I like to make sushi for guests. Its actually very inexpensive when you prepare it at home, and if you do a good job, your guests a re very impressed. Make at least three different rolls. I always include a california roll for those who are a little less experienced with sushi.

I also like to make vietnamese style lettuce wraps.

I make very "homely" food, simple, tasty and filling so I would probably make pate and salad leaves with toast to start, then roast chicken with vegetables for main course, and then strawberries and cream for dessert. Things like coq-au-vin are great as well, very little effort involved, stick it in the oven for 3 hours and it tastes delicious!

I love mexican food for parties. That way people can serve themselves. Make guacamole, a 9 layer dip, salsa, nachos, chicken and steak fajitas, and tacos. Definately have a salad to balance it all out. Finally, for drinks, have margaritas and coronas and you're set.

I like to prepare Tacos, Mole, Cssarole of any kind and a Polynision Pile-Up this one is great for the summer, everyone enjoys it.

I love to serve my home-made lasagna because it's filling and everyone loves lasagna. I make both meat & vegetarian kinds.
I serve it with garlic-butter french bread, salad, and strawberry shortcake or some other "fruity" stuff for dessert. It's always a hit.
Takes forever to make, though! : )

Homemade pesto on linguine with shrimp & sauteed mushrooms, topped with chopped tomatoes.
Tossed salad, & sour dough bread with olive oil dipping sauce, red wine Yummmy! (You can buy pesto at the store.)
