Strawberry Angel Food Cake
1 storebought Angel Food cake, torn into bite sized pieces
1 (8oz.) package no fat cream cheese, softened
1 (12 oz.) container light whipped cream
2/3 cup powdered sugar
2 lbs. fresh strawberries, sliced
With electric mixer, mix together the cream cheese, whipped cream and powdered sugar.
In a large clear glass bowl, layer half of the cake, spread half of the cream cheese mixure over that, then half of the strawberries. Repeat layers, ending with strawberries.
Chill until ready to serve.

Well, this has some sugar in it. You can reduce it by using pound cake sweetened with splenda or omiting the pound cake altogether.
Mix together 8 oz softened cream cheese with 1/3 cup sugar, 1 tsp vanilla and 1 tsp almond extract (can omit or substitute lemon or lime juice)
Slice one small loaf of pound cake (homemade, Sara Lee or from the bakery at the supermarket)
Cap and quarter 1 quart of strawberries, and mix with rinsed blueberries and raspberries.
In large clear bowl, layer half the poundcake on bottom. Top with 1/2 of the cream cheese mixture, then half the berries. Repeat the layering with second half of everything, ending with berries on top. It's really pretty and yummy too especially if the fruit is ripe. You can substitute splenda in the cream cheese mixture too, or reduce the sugar a little more. It's also pretty good without the poundcake - with just a small bowl of the cream cheese and the berries poured over the top.

Pudding Parfaits
1 package (4 servings) instant vanilla pudding mix
2 cups cold low-fat milk
2 medium-sized ripe bananas, cut into 1/8-inch slices
2-1/2 cups Quaker Oat Life Cereal
Whipped topping (optional)
Prepare pudidng directions using 2 cups milk.
In 12-ounce glass, layer 2 tablespoons pudding, 4 to 5 banana slices and 1/4 cup cereal. Repeat layers. Top with 3 tablespoons pudding, 2 tablespoons cereal and, if desired, whipped topping. Repeat Step 2 using remaining ingredients to make 3 more parfaits. Serve immediately.

How about a fresh fruit salad? Peaches, pineapple chunks, pears, dark bing cherries (pitted), strawberries, banana slices....any other fruits you like that would blend well. Mix some plain non-fat yogurt with a bit of sugar as a dressing. Perhaps some miniature marshmallows and a few chopped pecans or walnuts if you like.

Try picking up a plain chocolate cake, slice it in half of thirds, get a
container of whipped topping (I like the extra creamy variety) but you can also use the diet or flavored variety. Put the topping in the freezer for awhile and then spread a layer on one part of the cake then put a layer of sliced banana on the topping,on the other part spread a layer of Polaners or your own favorite raspberry jam or jelly,then put the pieces together,then spread some topping on top.Maybe sprinkle some chocolate powder on the topping,done.
It should take less than ten minutes.

My wife makes the best "cooking-free" dessert. Take chips ahoy cookies and whipped cream and milk......dip the cookies in the milk, then line a glass dish with them. Next, spead whipped cream to layer the cookies, then another layer of cookies and a final layer of whipped cream. Trust me, it's delicious. Not too healthy though. Oooops, forgot to tell you, put it in the fridge if you want it chilled (this is optional though)

get a pre-made grahm cracker crust, make some sugar free pudding(reduce milk by 1/2 cup for one box, or one cup for two boxes), put chopped fresh fruit then sugar free cool whip
strawberry pudding & fresh strawberries
vanilla pudding and mangoes
pistachio pudding & kiwis
the possibilites are endless
