Where pasta is sold fresh, they make a different shape every day so you know you're not getting yesterday's pasta.
Different regions of Italy have different shapes of pasta. Since more sauce sticks to the more complicated shapes, some are used for special purposes.
This doesn't fully explain why the dried pasta substitute they sell in the supermarket comes in so many shapes and sizes. I think Tescos made some of them up.
If you want to know what pasta is supposed to taste like, you'll need to go to Italy and eat your way through the menu.

Different sauces go better with different shapes. Spaghetti suits pestos or grainy sauces like bolognese, wide flat pasta (fettucine etc) suits thick sauces like carbonara or alfredo, and shapes like penne go well with chunky sauces.
Favourite pasta shape is radiatori, partly because of the story behind it - Ferrari held a design challenge as a competition to find new trainee designers. One of the challenges was to design a pasta that would pick up more sauce than any other and could be easily mass-manufactured. One kid borrowed the design of a Ferrari radiator grille, it worked, he got the job :)

The sauce covers the different shaped pastas differently. The ones that are spiral hold more sauce than the long skinny ones.

So the sauce, sticks in the the different shapes, & some pasta you can stuff with riccotta cheese, or layer then like lasgna, no matter what size & shape, if prepaired right, its GOOD!

Different shapes go better with different sauces. Eg those with ridges hold a creamy sauce really well. Also it's less boring to have some variety in life . . .

So they can sell it to people who like diff shapes and sizes... some pasta come with meats inside and stuffing inside.. one company loads or proucts = money and money
