I highly recommed Peruvian Ceviche... It's made with raw fish that is cooked in lemon juice and needs no heating... it's fast, nutricious, low fat, and easy to make...
Ingredients:
1 Lb. fish filet (I use grouper)
3 garlic cloves (minced)
1 small piece of ginger (smaller than a garlic clove) minced
Salt to taste
pepper to taste
Cilantro leaves (minced)
8 limes
cumin to taste
Corn (as a side dish) (stea,ed or boiled)... or from a can!!!
tabasco to taste (only if you like it spicy.. otherwise you can do without)
1 red onion sliced thinly
Lettuce
Preparation:
cut the fish into 1 inch cubes, and set aside. In a glass bowl squeeze the limes, add the salt, pepper, cilantro, cumin, garlic, ginger, and tabasco to taste. Mix well, and pour over the fish. Let it sit for 10 minutes... (you can take a shower or do something else in the meantime), then put a lettuce leave on a plate, serve the ceviche on top of it, put the steamed or boiled corn on the side (or from a can), put your onions on top and you are ready to eat....
I'm not Peruvian... but I have fallen in love with this dish... It's almost completely fat free (the only fat you get is the omega-3 fatty acid from the fish which is actually good for you)... I have been using this dish as part of my diet, and have lost 7 pounds in the past month.... I hope you enjoy this as much as I have...

Dry-Rub Grilled Pork Chops
Serves: 4 Active Time: 10 min Total Time: 20 min
4 boneless center-cut pork chops (8 oz each)
1 tsp Wegmans Barbecue Seasoning
2 Tbsp Wegmans Basting Oil
Preheat grill on HIGH 10 min.
Sprinkle each chop with 1/4 tsp salt or seasoning; gently press into meat. Drizzle with basting oil, rubbing gently into meat.
Clean grill with wire brush; using a soft cloth, coat grill lightly with vegetable oil.
Sear chops; cover closed, 2-3 min until meat has changed color one-quarter of way up from bottom. Turn over; baste (brush seared side with basting oil). Sear 2-3 min.
Turn over baste. Turn over again; baste. Reduce heat to LOW or MEDIUM (MEDIUM for cuts thinner than 1 inch); close cover. Cook 5-8 min. Check internal temp of chops by inserting thermometer halfway into thickest part of meat. Cook until internal temp reaches 145 degrees. Transfer to clean platter. Let rest at least 5-10 min.
Option: Garnish with fresh mint.
Meal Planning Tip: Prepare and chill pork. Prepare salad next. Grill pork first, then zucchini.

Grilled or broiled fish cooks up deliciously in about 6 minutes. Salmon, tilapia and catfish are my favorite. Dip them in a seasoning bake bought at the market first. Grill veggies from fresh or frozen over medium high heat in sauteed onion and peppers (red, green and or yellow) and add only "Mrs. Dash and a little (one tablespoon) Olive Oil for the best flavor. Serve with a bread of your choice, served with Olivio or Brummel and Brown spread.

Lemon pepper chicken breast doesn't have a long prep time, but has to cook at 350degrees for 1hr10min. Take some fresh boneless, skinless chicken breast, Squeeze two fresh lemons over the chicken, Sprinkle fresh ground pepper on it and bake at the temp and time specified above.

If you have a grill....kabobs. you can use almost anything from shrimp and swordfish to chicken to beef to pork for meats. Tonight I'll be having chicken with cherry tomatoes and summer squash, bell peppers(red and green), white and purple onions. it's easy finger food and should suit you well for what you are asking. baste them with olive oil and some salt and pepper and grill for about ten to twelve min. or until the meat is done.it's just wonderful and no clean up.

a salad from romain lettuce, celery, carrots, cucs, and some of Brianna's blush wine vinnegarett make a tastey and healthy addiction for any diet. you could also roll up some good turkey lunch meat and slice that into the mix for some lean protein.
