to make a delicious meal? I want something I can cook along with the egg noodles, not on the side.

*They are prepackaged noodles.* (I was thinking about throwning some veggies in there... mushrooms maybe)

MAKES ABOUT ONE POUND

Making homemade pasta is very easy, especially if you have some sort of pasta machine, a standing mixer with a roller attachment, or just the roller itself. I decided to try making whole wheat egg noodles based on my grandmother’s Chicken Potpie recipe. It made a beautiful dough that was very easy to roll, cut and cook. The whole wheat flour adds just a little flavor and texture to the noodles, but is not overpowering. You can use this recipe for any egg-based pasta shape you desire. If you can get white whole wheat flour, made from winter wheat, use it in place of the all-purpose flour for even more nutrition. After I try it, I will post a new or revised recipe.

INGREDIENTS

1 cup whole wheat flour
1-1/2 cups all-purpose flour, divided
1/4 teaspoon salt
3 large eggs, room temperature
1 tablespoon cold water
If using a standing mixer with a dough hook, place the whole wheat flour, 1 cup of the all-purpose flour and salt in the mixing bowl. Combine on the low setting. Add the eggs and water and combine using the setting recommended by the manufacturer for pasta or bread doughs until the dough forms a ball on the dough hook. You might need to add a little more water or, if too wet, a little more flour. After the ball forms, continue to knead for about 2 minutes, or until shiny and elastic. The dough should not be sticky. (The dough may be mixed by hand and kneaded for about 10 minutes.) Remove dough from the bowl and shape into a disk. Wrap in waxed or parchment paper and let rest for about 30 minutes. Proceed to roll the dough according to the directions for your pasta roller or machine. For noodles, you will want a rather thin sheet. (You can roll the dough by hand, but it does take a lot of work to get it thin enough.) Cut into desired strips or squares. The noodles may be used immediately or refrigerated, in layers on a baking sheet, dusted lightly with flour and separated by waxed paper, for several hours. Use in any of your favorite noodle recipes, adjusting the cooking time for fresh noodles.

MEATBALL STROGANOFF

1 lb. ground turkey or chicken
1/2 c. onion, finely chopped
1 egg
1 slice whole-wheat bread, coarsely crumbled
1/2 tsp. salt
Dash of pepper
1 can cream of mushroom soup
1/2 c. plain nonfat yogurt
1/3 c. lowfat milk
3 c. cooked noodles or 4 servings rice

Mix ground meat, onion, egg, bread and salt and pepper; make 16 small meatballs. Brown in skillet using Pam or other vegetable cooking spray. Blend in soup, yogurt, and milk. Cover and simmer for 15 to 20 minutes, stirring occasionally. Serve over noodles or rice. Serves 3 or 4.

A long time favorite of the entire family...its so quick and easy!

1st : chop 1/2 of an onion to boil with the noodles
2nd: after the noodles are done, drain.
3rd: add 1 can of cream of mushroom soup, 1 can of cream of chicken soup, a drained can of tuna or chicken, and a small can of evaporated milk. Stir.

*thats just a great base for any one dish meal...you can add peas, carrots, mushrooms...mushrooms are my favorite!! Just a small can will do*

My mother always just boiled the noodles, drained them then returned them to the (dry) pot. She'd crack a few eggs, beat them and then pour the egg over the noodles along with some chopped parsley (if she had it), return the pot to the heat and stir until the egg was cooked. Then she'd serve this wish a large salad.

I'm thinking a Tuna Noodle Casserole.

Cream of Mushroo Soup, Peas, and black pepper. This is something you can make on the stove top, you don't have to use your oven to bake it unless you want to. You can also add a little cheddar cheese on top, yum.

OR

Get canned beef gravy, peas, ground beef


Either dish goes great with a Budweiser

After boiling the noodles ad 2 bulbs of cracked garlic. Not chopped...you just want a hind of garlic going on. Butter and lemon pepper seasoning with Italian seasoning. If you dont have the lemon pepper you can actually just do lemon juice and black pepper.

Get some boneless chicken breasts, brocolli, and alfredo sauce. Cut the chicken after cooking and mix with the cooked brocolli, noodles, and alfredo sauce. And you have chicken and brocolli alfredo!!

Toss in some grilled chicken, mushrooms, parmesan cheese and sundried tomatoes and mmmm....
