Double Decker Toasted Sandwiches

Ingredients
1 egg per sandwich
Oil for frying eggs
Wholemeal or white sliced sandwich bread
Butter or margarine
Sliced cheese
Sliced smoked turkey, pastrami or any other cold cuts

Garnish:
Lettuce leaves (rinsed and patted dry)
Sliced tomatoes
Sliced onion
Sliced cucumber

Sauces and spreads:
Chilli sauce
Mustard (preferably whole grain)
Mayonnaise

Method
Heat a teaspoonful of oil over medium heat in a small frying pan and crack egg into the pan. Fry for 2 minutes per side or until white is lightly browned and yolk sets. Remove fried egg onto a plate and allow to cool slightly.

Toast bread until golden brown and spread lightly with butter or margarine. Assemble your double decker sandwich as desired, using 3 slices of toast per sandwich and layering the fried egg, cheese and sliced cold meat with the salad vegetables, mayonnaise, mustard and chilli sauce (which should go over the egg). Cut diagonally with a sharp knife (preferably a serrated bread knife) and serve immediately. A simple tossed green salad makes a great accompaniment.


Triple Layer Tuna Mayo Sandwich

Ingredients
4 slices white bread
2 slices wholemeal bread
4 tbsp wheat meat tuna, flaked
1 hardboiled egg, thinly sliced
3 tbsp mayonnaise
Dash of ground black pepper
1 tbsp chopped green olives
2 tbsp chopped tomato
2 tbsp soft margarine
Several thin slices cucumber
Several thin slices carrot
Some alfalfa

Method
Combine tuna, olives, tomato, pepper and mayonnaise in a mixing bowl. Spread soft margarine on one side of the bread and set aside.

Spread the mixture over one slice of white bread and top up with another slice of buttered wholemeal bread.

Spread another layer of mixture on top of the wholemeal bread and top up with another slice of white bread.

Add cucumber, carrot, alfalfa and egg slices. Press on lightly and cut into a triangle.

Wrap up with cling film wrap. Refrigerate for at least an hour before serving or preferably overnight if you are having it for breakfast. Just before serving, ***** a toothpick in the centre of the triangle, with a cherry on the tip.


Monster Chicken Sandwich

Ingredients
Honey mustard mayonnaise:
1 tsp honey
½ tsp mild (preferably whole grain) mustard
Generous pinch of freshly-ground
black pepper
2 tbsp mayonnaise
Slices of pan-fried or roast chicken *
Thick slices of whole meal or multi-grain bread (I prefer the bread toasted for extra crunch!)
lettuce, tomato and cucumber slices

You can also use cold cuts such as turkey ham, beef pastrami, chicken bologna, etc.

Method
Either use slices of ready-roasted chicken or pan fry chicken breasts which have been rubbed with a little salt, pepper and/or any other seasonings of your choice (spices, herbs, curry powder, etc.). Allow chicken to cool for 10 minutes before cutting into 0.5 cm slices.

Mix all the ingredients for the honey mustard mayonnaise in a small bowl.

Assemble sandwich using the sliced chicken and vegetable in layers, adding some honey mustard mayonnaise in between the layers. For maximum enjoyment, eat immediately.


Rainbow Reef Sandwiches

Ingredients
3 large French loaves, split lengthways
Butter
6 eggs
Pepper, to taste
Salt, to taste
Paprika, to taste
2-3 tomatoes, sliced
3 tablespoons cream cheese
6 pineapple cubes, chopped
1 orange, peeled and chopped
2 sausages, grilled, sliced or diced
5 baby cucumbers, sliced
100g boiled shrimps
3 tablespoons mayonnaise
3 tablespoons mustard
1/2 teaspoon lemon juice

Method
Butter the lengths of French loaf. Warm a dollop of butter in a pan, scramble eggs and season with salt, pepper and paprika. Cook until just set, and allow to cool.

Divide each length of the French loaf into four sections lengthwise. You can use chopped parsley to separate the sections if desired.

Each quarter can be topped with alternating combinations such as:
• scrambled egg topped with tomato slices
• cream cheese topped with pineapple and orange
• thinly-sliced tomatoes topped with diced / sliced sausages
• cream cheese topped with cucumber and tomato slices
• shrimps mixed with a little mayonnaise, mustard, lemon juice and pepper

Vary the sequence of combinations on each length of the French loaf. Using a sharp knife, gently slice each quarter where the parsley serves as a divider, but leave the bread arranged as if it were one long roll. Serve immediately.

Note
The toppings for these open-face sandwiches are colourful and attractive. They are also made according to individual taste, which is why the recipe denotes the general ingredient amounts and combinations, leaving it up to you to decide the exact amounts in each topping variation.

Some of these can be made ahead:

Chicken Salad:
6 boneless chicken breast halves, cooked and diced
1 cup chopped celery
1 teaspoon salt-free herb and spice blend
1 cup mayonnaise <<<<<<<< YOU GOTTA LIKE THE 4 INGREDIENTS THING!


Mommy's Surprise:
1 pound ground beef
1 small onion, diced
1 green bell pepper, diced
1 (4 ounce) can chopped mushrooms, drained (optional)
1 (10.75 ounce) can condensed cream of mushroom soup
2 cups shredded Cheddar cheese
6 Kaiser rolls, split
In a large skillet over medium-high heat, brown the ground beef with the onion, green pepper, and mushrooms. Drain off excess grease. Reduce heat to medium, and stir in the cream of mushroom soup. Mix in the Cheddar cheese until blended, then remove from heat.
Preheat the oven to 350 degrees F (175 degrees C). Scoop out the centers of the Kaiser rolls on both the top and bottom. Spoon the ground beef mixture into the rolls. Wrap each one in aluminum foil.
Bake for 20 minutes in the preheated oven, or until the rolls are toasted.

pretzals on a sandwich give it some extra crunch!
Also mustard/mayo single packs from the fast food or deli keeps the sandwich from gettin soggy.
Yogurt containers can be washed and used for lunches to pack prepped and cut veggies, celery, olives, carrots, cucumbers etc.

~ To get kids to eat salad and vegies? Call it salad 'Chips' and prep it in the size of chips. Make special 'seasoning packet' of salt, pepper, paprika, other colored spices for them to add!
~ Ranch dressing dip is good with the veggies too!

One of my favorite easy-to-make sandwiches is peanut butter and banana. take two pieces of bread and but a thin layer of peanut butter on both. Then cut a banana into 9 small coin-like discs (about 1 cm thick or a little more) and arrange the slices in a 3x3 square on one of the pieces of bread. Then put the other on top...and voila!

I use a bunch of veggies - tomatoes, peppers, lettuce, zucchini, etc. I buy turkey, ham, and cheese at the store along with "sub" bread and "sub" sauce - they sell it by the deli (ask them). Then I make my sandwiches the night before school, bag them and put in the frig. This is simple, easy, filling, and healthy.

hello sweety this is sassy V,
I put butter or condiment on both sides to keep it from sogging up bread. My daughter loves to help prepare her lunch, then she tends to eat all of it w/o trading. I take pita pockets and cut them in 4s then ask her what she would like to put in thme, I put the ingredients wrapped in saran wrap and she adds it herself. She is only 6. Just remember age and time your children have. Tuna will be kinda messy for a 6 yr old to put together at school.
Sugg. we use
cheese, hams, turkeys, she loves spinach(raw) and pickles and peanut butter with raisins or apples, bannas tend to get too mushy at school. She loves cucumbers too, Make a breakfast roll too, scramble your egg and mixings add cheese and wrap it in soft taco or tortilla. Hope i gave you some cool ideas. I am not big on recipes, sorry, but i have watched what peopel like and try to make things easy. hope i helped.

Quite honestly make what your kids eat!!! From experience (2 Kids) if they do not like it why would I send it? Yah they will trade for something worse and made with who knows what. Something I have found they like is tortillas rolled with pb&j and sometimes cold cuts and cheese. If your school offers microwave use then send pizza pockets, pogos, easy things for them to heat up, my kids take that stuff and seriously do not make as many trades as before.

tuna salad-just tuna and mayo and you can ad a little bit of garlic seasoning too it for more taste

try some salad dressings to zing it up a bit....salami with some provilone cheese...pretty tasty with italian dressing...oh the good ol peanut butter and banana sandwich. heres a really good one. get some pepercorn ranch, some lettuce, turkey, sliced green pepers, cucumbers, and sliced tomatoes...very healty and tasty at the same time.or ham, honey mustard, cheddar cheese, also great idea!

Why not try wraps or pitas for a change? They are easy and you can put any veggies in them. They are also great with hummus or even P.B and J. Its great for kids when they are getting sick of sandwiches

Sandwhiches, my favorite food!
There are so many different types. Here are some of my fav's:
Veggie sandwhich-everything bagel, or wheat bread; veggie cream cheese spread, cucumbers, onions, tomatoes, peppers, and lettuce.
6-in-1: italian bread, provalone, salami, ham, lettuce, tomatoe, onion, oil and viniger, pickle on the side
Left over chicken finger parm: rolls, chicken fingers, red sauce, mozerella cheese, lots of napkins!
Moo cow- Roastbeef, munster cheese, lettuce(romaine) tomatoe, onion, potatoe salad
Turkey delight- butterball turkey, american, cheddar, macaroni salad, lettuce
sloppy joe- rye bread, roast beef, cole slaw, cheese(provalon is good) lettuce tomatoe, onion
PB &J- peanut butter, jelly, with any of the following: nutterbutter, nutella italian chocolate, bananas

I have a good snack recipe if your kids like bananah's ok take a bananah and cut the middle then spread peanut butter in the middle and squish it together. It's a really good lunch snack. Trust me.
