1 cn Evaporated skim milk
6 oz Parmesan cheese, low fat
-Pepper to taste

Warm milk, add cheese until melted and thickened. Add pepper. I
usually add a medium white sauce to make more and lighten the taste.
Also, crab meat, broccoli, spinach, mushrooms can be added; mixed or
separately. Have fun with it and pour over pasta. (White sauce is
also good made with evaporated skim milk.)

1/4 c All-Purpose Flour
3 c Low-Fat (1%) Milk
1 t Salt
1/2 ts Pepper
pn Nutmeg
3/4 c Grated Parmesan Cheese
1 lb Cooked Fettuccine

Melt butter. Add flour; cook, stirring, 1 minute. Whisk in milk, salt,
pepper and nutmeg. Bring to boil, whisking; reduce and simmer, stirring
occasionally, 5 minutes. Toss with cheese and cooked pasta.

Hello this is Sassy V,
I love alfredo, and I have not come across anything different to make it low- fat besides cut back on butter and the level of milk. I take out the butter for some of my friends and use canned skim evaporated milk. Easiest is to by the low fat jar stuff no hassle and if you look at the calorie count its about the same or a little less from salt.

I don't have a recipe for alfredo, but I make great cream sauces for pasta using fat-free half and half. Add some garlic, thicken with a little cornstarch, add some Parmesan and you're pretty close. I almost can't eat the overly rich sauces in restaurants anymore.

low fat Alfredo Sauce
4 servings

(12 ounce) can evaporated skim milk
2 tablespoons grated nonfat parmesan cheese
3 tablespoons butter-flavored sprinkles
1/4 teaspoon white pepper
6 tablespoons grated nonfat parmesan cheese
1/4 cup sliced scallions (garnish)
2 tablespoons chopped fresh parsley (garnish)

In a saucepan, combine the evaporated skimmed milk, 2 tablespoons grated nonfat Parmesan cheese, 3 teaspoons butter-flavored sprinkles and 1/4 teaspoon ground white pepper.
Stir well. Cook on med-low til sauce is heated through.
Gently stir in 10 oz of cooked, drained fettuccine pasta.
(Add a little more milk if it seems too dry.) Remove pot from heat and add the remaining 6 tablespoons grated nonfat Parmesan and toss.
Garnish with scallions and parsley.
Serve immediately.

INGREDIENTS:
1/4 cup light cream cheese
1/4 cup low-fat milk
1 tablespoon flour
1 cup low-fat milk
2 tablespoons butter or margarine
1/2 cup shredded Parmesan cheese
Salt and freshly grated pepper to taste (optional)
PREPARATION:
Combine cream cheese, 1/4 cup milk, and flour in a small mixing bowl. Beat until well blended. Slowly pour in remaining 1 cup milk and beat until smooth.
Melt 2 tablespoons butter in large, nonstick sauce pan over medium heat.
Add the milk mixture and continue to heat, stirring constantly, until the sauce has thickened (about 4 minutes).
Stir in grated Parmesan cheese, adding salt and pepper to taste if desired.
Serves 6.
This recipe makes 2 cups of sauce.

Serving suggestion: Serve 1/3 cup of sauce over 1 cup of fettuccine noodles.

Melt 8 oz low fat (or fat free) cream cheese over low heat. Stir in 1/2 cup fat free evaporated (not condensed) milk. Add 2 TB grated parmesan cheese, sprinkle of nutmeg and pinch of ground pepper (white is best, but black will work).

hahahahahahahaha Sorry, it is just one of those recipes that you have to use full fat. Yes, yes, I know you can use half and half and low fat cheese and all that fun stuff but it wrecks the whole texture and taste. I suppose it will still be good but it just wont be real good. Make it once and a while and eat moderate portions and then you dont have to be so worried bout the calories.
