A lot of it has to do with the type of moz cheese you use. I have been in the italian food industry for over 15 years, and have noticed the cheeper the cheese, the more oil it has in it. That is a large cause as to why the cheese sticks when shreded. Try to get a better cheese, like roma or absolutit, or any with a low oil count and high dairy mixture. Also make sure your shreder is sharp. Hope I could help!

You can put it in the freeze about 2 hours before shredding it.

Freezing the little ball 'o love before you shred it makes the job a little easier...I fear that it will still stick some though.

Hello sweety
I do not know what your going to make with your cheese, but just a little flour, helps it form sticking. If you are making a fondue then add a little more, but try to use swiss and cheddar. It coats better. Toss the cheese with a little flour , very very little goes long way.
