very good question for a chicken lover like me. in the beginning, the spices in kfc were awl some and well guarded and after deep fried the chicken was put into a pressure cooker which made it tender and sealed in the flavor. one day the colornal sold kfc and things changed and he was very unhappy;i wish you could taste the real kfc. now Popeye's is just rolled in mild or hot spices floured and deep fried and sold relying a lot on Cajun and the character Popeye. if you want really good chicken then buy a good quality chicken,cut it up,salt and pepper, or other spices you like,coat with flour,fry on medium heat lightly brown both sides,pour off almost all the grease,cover chicken for about 10 minutes,cook on very low fire for about 10 minutes,lightly salt turn chicken over lightly salt and cover simmer for another 10 minutes. my favorite is to cut potatoes into 1/2 squares with diced onions heat oil when hot add potatoes and onions and then turn down fire and cover,in about 5 minutes turn over with a wide spatula.you do this about 6 times and if you have a cast iron skillet to do this in, oh boy;southern cooking and we also take the grease the chicken was cooked in pour off leaving to brown flower and then slowly pour 1/2 water and 1/2 milk to thicken to pour over mashed potatoes and home made biscuits.

POPEYES!! All the way. I like it because its spicy, and the flavor is just better to me. Not to mention the great sides, their biscuits are even better than Kentucky Fried.

Kentucky fried, extra crispy, is the best. I think that is the best fried chicken you can buy. However, nothing beats home cooked!
