I come from a long line of restaurant people. The trick to crispy fries is to cook them twice. You prepare them as usual, but the first fry is only over medium heat about 4 minutes. Take them out and drain them a few minutes as you turn the oil to hotter. Drop them back in and cook about another 6 minutes, or until golden. Sprinkle with salt as soon as they come out. Enjoy!

Peel your potatoes and cut them into long thin strips (if you want them like mcdonalds). Then deep fry them (a deep fryer is safest...I suppose you could also put oil in a deep sauce pan...dont fill it over half full to be on the safe side).
Extra tips - Get a plate and put a paper towel or two on top of it. Use a slotted spoon or other utensil so when you pick the fries up the grease will drain out and back into the pan or deep fryer. Wait till the fries get slightly browned, but not too browned because they'll be dry. If you're not sure you can take a couple out and let them cool for a second and try one. Anyway, put the fries on top of the paper towels on the plate, so they can drain a little more of the grease. Salt immediately, because at this point they'll be hot and moist with grease so the salt will stick and not fall off. Then ENJOY!

I don't know that you can because Mcdonald fries are mass produced and they are a potato product, not an actual potato.
Give this a try. Slice your potatoe to a slim width. I put mine in salted ice water until I am ready to use them. Heat your oil to350 degrees. Dry the fries off and cook to golden brown and crispy. Salt them immediately after removing them from the oil so the salt sticks.

The potato finger cuts are available in supermarket. Bring it home and heat a cup of vegetable oil in a pan over a medium flame. Wait for 5 mins and carefully put the fries in pan. Stir them from time to time and take them out after 5-6 mins. Sprinkle salt and enjoy.
If you want to make home made, slice potatoes length-wise (0.25 cm thick) and then cut them into fingers.

Go to the grocery store and buy a bag of OREIDA shoestring potatoes and spray them with vegetable oil salt and pepper and bake at 425 degrees for 15-20 minutes.
You might want to check on the time.
For extra crispy broil a on second highest oven rack and watch them carefully to avoid burning them.
I use a rack over a flat sheet pan and they turn out crispy but tender on the inside.

Potatos, salt, oil & a good "fry daddy" - you'll have a hard time getting the right size slices from your potatos - they are cut by a machine & not by hand.....

Try this: peel your potatoes and slice them long ways. Then. take your oval slices and slice them long ways. i'd batter them in flour and deep-fry them!
