I found out I was diabetic. I need ideas for healthy sauces to pour over food for flavoring since drowning food in butter is out.

Diabetic Chocolate Sauce
3/4 cup

2 unsweetened chocolate squares
6 tablespoons water
1 pinch salt
3 tablespoons butter
1/4 teaspoon vanilla
16 teaspoons artificial sweetener

Combine chocolate, water, salt, butter in a heavy saucepan. Cook over medium heat stirring constantly until chocolate melts and sauce is smooth. Stir in artificial sweetener. Serve warm or chilled.

Diabetic Barbecue Sauce
6 servings

1 small onion, minced
1 (8 ounce) can tomato sauce
2 cups water
1/4 cup wine vinegar
1/4 cup Worcestershire sauce
1 teaspoon salt (optional)
2 teaspoons paprika
2 teaspoons chili powder
1 teaspoon pepper
1/2 teaspoon cinnamon
1/8 teaspoon cloves

Combine all ingredients; bring to full boil.
Simmer 20 minutes.
Serving size= 1/4 cup, free food.

There is a wonderful cookbook out titled, 'Cooking for Diabetic Kids" by Gina Cianfarani. The book has over 100 recipes and its a softcover book. The recipes are good for everyone who is diabetic and people on a diet.

I love making my own sauces, without sugar. I add a little Worcestershire sauce to things (like grilled cheese sandwiches, with tomato, Worcestershire sauce and broccoli....good). Low-fat blue cheese (or fat free) is good, other fat-free salad dressings work too-- fat free Italian works great. Mrs. Dash has lots of fat-free, low-sodium blends that are perfect. My family uses spray-on butter, which is very low calorie and low fat because you use such a small amount, and it spreads evenly on food.
