2 lbs. deer or beef
salt & pepper, to taste
flour
1 can cream of mushroom soup
Mix salt, pepper, & flour together; coat meat well. Then pound meat, & brown on both sides in skillet with small amount of oil. Put all pieces in baking dish. Pour undiluted mushroom soup over all, cover & bake slowly till done.

Another tasty way to use deer meat is to have it ground, then use your favorite chili recipe, replacing the beef it calls for with your ground deer meat.

This really is better with the bacon, but if you are averse to it, leave it out and add some liquid smoke... Venison Ragout 3 lbs. venison 3 large onions, chopped ½ lb. bacon, chopped 1 can tomato soup 2 tsp. bourbon 1 tsp. salt 3 tbsp. olive oil 5 garlic cloves, crushed 1 tsp. curry powder 1½ quarts water ¼ cup beer ½ lb. fresh mushrooms, sliced Cut meat in cubes about 1½ inches square. Heat olive oil in electric skillet and add meat, onion, garlic and bacon. Cook until all is richly browned, stirring frequently. Add all other ingredients except mushrooms, cover and simmer for 50 minutes. Add mushrooms. Cover and simmer for 10 minutes. Serve over hot rice or noodles.

Soak a deer roast in buttermilk overnight. Place in crock pot with 1 can cream of mushroom soup, 1 pkg dry onion soup mix & enough water to cover. Cook on low 6 - 8 hours adding water if needed. During the last 30 minutes or so, add sliced baby bela mushrooms.....Serve with roasted potatos & carrots, corn on the cob & your favorite dinner bread.

50 MINUTE MEATLOAF for ground deer
2/3 c. undiluted Pet milk
1 1/2 lbs. ground beef or deer meat
1/2 c. fine cracker crumbs
1 egg
1/2 c. chopped onion
1 tsp. garlic salt
1 tbsp. mustard
1/4 c. bell pepper
SPICY DEER SWISS STEAK
2 lb. deer round or chuck steak (cut at least 1/2 inch thick)
1/2 c. flour (seasoned with 1 tsp. salt and pepper)
3 tbsp. bacon grease
1 can stewed tomatoes (14 1/2 oz.)
1 can diced Ro-Tel (10 oz.)
1 tbsp. Worcestershire sauce
1 pack brown gravy mix
Cut steak into serving portions, pound on both sides with a meat mallet. Dredge meat in seasoned flour. Melt bacon grease in 12 inch iron skillet. Brown meat on both sides over low-medium heat. Remove meat, set aside.
Stir in stewed tomatoes, diced Ro-Tel, brown gravy mix and Worcestershire sauce. Break or cut up any large tomatoes. Stirring constantly, cook over medium heat until gravy mix is completely dissolved and the mixture thickens slightly. Remove from heat. Add meat, spooning sauce over it. Cover with aluminum foil or oven proof lid. Bake in a preheated 350 degree oven for 1 hour or until meat is tender.

deer meat is very tasty if properly prepared. My Dad takes it and fries it on low heat with butter, garlic, onions and red peppers or and hot peppers. With s&p of course and a side of rice or french fries...
